5 minute Crunchy No Bake Nutty Rice Puff Bars

These wholesome and crunchy peanut rice puffs bars contain just 5 ingredients and take less than 5 minutes to make! Plus they happen to be dairy, gluten and refined sugar free! They are basically a natural version of an “LCM” so they make a perfect snack for kids and are a great source of energy for postnatal mums too.


INGREDIENTS: 

1/2 cup peanut butter

1/2 cup coconut oil

1 tsp vanilla extract 

1/3 cup honey 

2 cups rice puffs

METHOD:

Line a square baking dish with baking paper.

Place the peanut butter, coconut oil and vanilla in a small saucepan and melt on low heat until well incorporated. Mix in the honey until combined. Now add your rice puffs and stir the whole mix a few times so all the puffs are coated, taking care not to crush them.

Using a spatula, put the mixture into the baking dish and pat down so it’s all even. Pop into the freezer to set.

Remove from freezer after 2-3 hours and use a sharp knife to cut it into bars. Enjoy!

These can be stored in the fridge or freezer in an airtight container. They won’t last long!


Notes:

These bars need to be stored in the fridge as coconut oil starts to soften at room temperature.

You can mix it up and add choc chips too.
